A few days ago I had a chance to prepare this recipe and loved it. A beautiful, tasty and easy recipe!
Everyone has their own meatloaf recipe, so use this as a guide but feel free to improvise.
- 2 lbs. ground beef.
- 2 lbs. ground veal.
- 1 lb. bacon.
- 1 cup crumbled bread.
- 1 large ripe tomato.
- 1 cubanela pepper (you can also use bell)
- 1 large red onion.
- 2 tbsp. tomato paste.
- 1 large white onion
- 1 red bell pepper.
- 2 eggs.
- 2 tbsp. olives.
- 1 tbsp. BBQ sauce.
- 2 tbsp. ketchup.
- ½ cup red wine.
- ½ cup honey.
- 2 tbsp. garlic paste.
- Black pepper and salt to taste.
Season your meat by mixing it with the ketchup, tomato paste, tomato, cubanela pepper, red onion, white onion, red pepper and olives (all chopped very small) Once mixed, add the eggs and the bread crumbles.
Prepare an oven tray, cover with aluminum foil and cover the aluminum foil with bacon.
Shape the ground meat into the traditional cylinder shape meatloaf has and pun on top of the bacon. Then cover with the aluminum foil as tight as possible. As you do that, because the aluminum foil was previously covered with bacon, the bacon will cover the meat.
Put in the oven at 225 degrees C for an hour and then take off the foil and allow gild while brushing the BBQ and honey sauce (50/50) Keep brushing every five minutes until the bacon is hard and crispy. Brush some more when you take out. Cover and allow to rest for at least 10 minutes before uncovering and serving.
