Hello friends and fellow foodies!
Today I bring you a very traditional Dominican and Puerto Rican recipe: “arroz con pollo”! (rice with chicken)
It’s important to know that “arroz con pollo” (chicken with rice) is not the same as “chicken rice” (“Locrio”) “Locrio” and “Arroz con pollo” have almost the same ingredients but the cooking is very different.
In “Locrio” the chicken is cooked along the rice, in “Arroz con pollo” the chicken and rice are cooked separately and put back together when ready.

Ingredients
- 4 cups rice.
- 4 cups water
- 1 tbsp. garlic paste.
- Chives, cilantrico and cilantro.
- 1 small chicken.
- 2 tbsp. tomato paste.
- 1 large red onion.
- 1 cubanela pepper.
- 1 bouillon cube.
- Salt to taste.
Directions
Prepare a “Stewed Chicken” and separate.
Prepare a white rice.
Then, take all the chicken sauce and mix well with the white rice. When ready, add the meat and mix carefully, to prevent the chicken from crumbling.
