Liver with onions is one of those meals that not everyone knows how to prepare in the Dominican style. Even though it’s simple, it has some secrets!
First of all, it needs to be fresh. It also needs to be properly cleaned of its surrounding tissue. I solve this by having my butcher take care of it. Then it also needs to be cut very thin. Yes! My butcher also does the trick.
- 2 lbs. liver. (cleaned and thinly cut)
- 2 tbsp. salt.
- 2 tbsp. oregano.
- 2 tbsp. black pepper.
- 1 tbsp. garlic paste (natural please. Just blend your garlic with a bit of oil)
- ½ large onion or a small one.
Wash and season your liver. Put a pan on the fire with a bit of oil and let it get very hot.
Lightly fry your liver and take out.
Cut the onions and stir fry them in the leftover oil.
Serve immediately and enjoy!
