Hello my dear friends and fellow foodies!
Potato salad is one of my favorites. Today I share with you a slightly different version: a sweet potato salad!
Sweet potato, besides being flavorful is considered healthier than the common potato, for its higher fiber and vitamin A content as well as fewer calories and carbohydrates.
- 2 lbs. boiled sweet potatoes.
- 1 boiled carrot.
- 1 small can of sweet peas
- ½ small white onion (finely chopped)
- 1 small can of corn.
- 2 spoonfuls of olive oil
- 2 boiled eggs.
- ½ red bell pepper (finely chopped)
- 1 leek bush.
Boil the sweet potatoes and carrot and chop them in squares, (some prefer to chop them first and to boil them later to assure that they are firm)
Then add the other ingredients. Mix everything, add mayonnaise and salt to taste voila!
