Hello friends and fellow foodies!
A few days ago we got home in a hurry with little time and much appetite. Before I got in trouble with my troop I started to chop vegetables and stir frying some chicken breasts in some butter. As soon as the chicken was halfway done (2-3 minutes) I added the vegetables and in less than 5 minutes we had food on the table.
As I enjoyed this quickly put together dish I thought it was something to share. Who doesn’t need an idea for something quick and tasty?
Enjoy!
Ingredients
- Red, yellow, green and orange bell peppers. Chopped.
- White onion. Chopped.
- Broccoli.
- Chicken breasts (you may use a different protein or just make it vegetarian)
- 1 tbsp. butter.
- 1 tbsp. sesame oil.
- 1 pinch of ginger. Finely chopped.
- Red pepper.
- Black pepper and salt to taste.
- 1 bush of chives. Chopped.
Directions.
Cut the chicken breasts the size you prefer, lightly season with salt and pepper (I like to use a pinch of garlic too)
Heat a beat of sesame oil and butter, add the breasts and allow to cook for 2-3 minutes. Add the vegetables and finish 2-3 additional minutes. End up with the red and black pepper and salt to taste. Sprinkle some chopped chives on top.
You may enjoy with some toasted bread or rice if you have time to make some.
A big hug from the breezy Caribbean!
