Hello everyone!
I thought it would be a good idea to start light this week as we have some big days coming! (Especially in the DR where the holidays start in October and extend to January and where during the holidays everywhere you arrive someone shares something to eat and you really can’t say no without offending)
Today’s sandwich is very easy, quick, nutritious and it really features the natural flavors. Not too elaborate but just as tasty!
Ingredients
- Bread. You may use the one you prefer. Whole wheat and high fiber definitely works.
- Tomato cut in slices.
- Fish fillet. (I used catfish but you may use a different fish)
- A mini Italian sausage.
- 1 slice of cheddar cheese.
- Butter.
- Salt and pepper.
Directions
Season your fish lightly with just salt and pepper (ok, we do use a bit of lemon juice too!) Grill it with a bit of butter. While your grilling it, why not adding the Italian sausage (cut through) and your bread. The sausage won’t need additional fat, just let it cook in its own fat.
Set your sandwich with the fish, toast, tomato, sausage and other ingredients. Feel free to add anything else you may like (I can definitely see some bacon working here)
Enjoy! A big hug from the warm Caribbean!
