I had been thinking about this recipe for some time, but had not been able to get to it until today!
Dominicans are all about rice. We make a rice out of everything. Today’s recipe is not only easy and economical but also quick and simple.
Ingredients
- 4 cups of rice.
- 4 cups of water.
- Garlic and vegetable paste. (you can check my recipe for both)
- 2 lbs. ground meat (beef, pork, chicken, turkey or even soy for a vegetarian option)
- Tomato paste
- 1 tbsp. olives.
- 1 large red onion
- 1 Cubanela pepper (a green bell pepper would do if you can’t find cubanela)
- Leek, cilantrico and salt
- 1 boullion cube.
- 1 teaspoon saffron.
- Salt to taste.
Directions
Start by cooking your ground meat as if you were preparing it for a chili (stew it) save it.
Stir fry all the ingredients, then add the meat and the water. Once it begins to boil add the rice and stir frequently until the rice dries off. Once it dries off, cover and allow to cook on low fire for half hour.
