Dominican salami rice
Hello Everyone!
Today I share another true classical Dominican traditional recipe.
Salami rice is very popular in the Dominican Republic, partly because Dominican salami has been unexpensive.
Enjoy this very rich recipe
For 6 people.
Ingredients for the salami rice
- 4 cups of rice.
- 4 cups of water.
- 1 tbsp. garlic paste.
- 2 lbs. of salami cut up in cubes.
- Tomato paste.
- 1 spoonful of capers.
- 1 spoonful of olives.
- 1 large red onion
- 1 Cubanela pepper (a green bell pepper would do if you can’t find cubanela)
- Chives and culantro.
- 1 boullion cube.
- Salt to taste.
Directions for the salami rice
Lightly fry all the ingredients (sofrito) except the rice. Once it begins to boil add the rice and stir frequently until the rice dries off.
Once dry (but still moist) cover and allow to cook on low fire for half hour.
